since one of my many new years resolutions was to cook more and try new recipes i have come across several that i love. Now for those of you who know me best you know the recipe must be quick and easy because my attention span is VERY short and my brain goes about 90 miles a minute. I have learned that if i should get to blogging( or whatever) while waiting for something to finish sauteing( you know what i mean) i end up with a burnt pot and that's about it. so with that said i have a great recipe to share with all of my fellow bloggers. It is from my fav Rachel Ray and even better it's a thirty minute meal. yippee
its called chicken succotash.
ingredients
1 cup heavy whipping cream
2 tablespoons butter
(need i say more) haha
salt and pepper to taste
one bundle of green onions
rotisserie chicken
10 oz frozen package of corn
10 oz frozen package of lima beans
1 fresh tomato
ok are you ready for how easy this is.....
put butter and whites of green onion in pot...simmer for a couple of minutes( didn't know that you could separate a green onion but that's what the recipe said so i went with it)
add heavy whipping cream and salt and pepper bring to boil stirring constantly.. be careful not to burn.
at this point add shredded rotisserie chicken, thawed corn and lima's ( i just ran them under warm water for a min)
let simmer for 10 minutes or until corn and limas are soft
and for the final touch ..add fresh chopped tomato and rest of chives just before you serve.
this is a recipe for 4 but...if you have a man in the house you may want to double the recipe...
it was so super yummy that we had no left overs boooo...so next time i will be sure to double it.

yes you have been spelling tomato wrong your whole life.. i always knew but never told you because it made me laugh every time i saw it!! hehe.
PS- i sure hope that dish is on the menu for this weekend!!! get to cookin lady!!!!!
